Farmer Ted and his wife Nicole are left with an abundance of organic celeriac that does not meet the perfect consumer beauty ideal. On an annual basis, this amounts to whopping 300,000 kilos of celeriac that not will end up on the supermarket shelves. Time for a rescue operation!

The past six months will go down in history as one of the wettest ever. The almost continuous wetness and rain do not only make us crave for sunshine, but unfortunately also have a strong impact on the crops of our farmers.
Such is the case for farmer Ted and his wife Nicoline Vaalburg, based in Zuidschermer, North Holland. They are left with an abundance of organic celeriac that does not meet the perfect consumer beauty ideal. On an annual basis, this amounts to a whopping 300,000 kilos of celeriac that will not end up on supermarket shelves.
Wet soil due to persistent rains has made harvesting difficult. As a result, a significant portion of the organic celeriac has been rejected and about 7 to 8 thousand kilos are now left lying around every week. What a shame...
Although the celeriac has minor imperfections, these vegetables are still of good quality and perfectly edible. Celeriac with character!
